Lazy Snow Days Make for Lazy Bloggers

Laziness has gotten the better of me, I meant to post at least once more last week but failed to. Last Sunday night it snowed almost an entire foot at our house, more than I’ve ever seen in my entire 17 years of living here in Alabama. Of course that meant we were stuck at home for several days because of icy roads (and crazy drivers).

I should have used that time to bake and cook like a maniac, but I mostly ended up just making fast and simple things like salads, soup, and sammichs. Below is a picture of one of my favorite combos ever: A grilled cheez and tomato soup. I made this after trecking through the yard with the doggies and building a snowman.

Being stuck at the house also meant lots of knitting and sewing being done. This cute pirate bunny was whipped up over just two short days. Though at first I intended for him to be a regular bunny, I realized I only had one black stuffed animal eye left so I improvised and he turned into a pirate! Leftover Re-do

I made a new meal out of the leftover pesto tofu I had sitting in the fridge. I put a tiny bit of mayo into the tofu and made it sort of into a tofu “chicken” salad. Then I wrapped it into a tortilla and grilled it. It’s served up with some Progresso Hearty Tomato Soup.

Everyday Vegan Meals

Sorry for the lack of posting lately. I’ve got no good excuses, I’ve just been being lazy.

No recipes today, but here are some of the things I’ve been eating recently:

I’ve been cooking my way through The Ultimate Uncheese Cookbook by Jo Stephaniak and so far everything I’ve made from it has been delicious! Above is Cheezy Rice and Broccoli Casserole served with steamed zucchini and Skallops coated in spicy Shake ‘N Bake then fried. One of the other yummy things from the book is Broccoli Cheez Soup (Can you tell I like the combo of cheez and broccoli?) pictured here topped with Bac-os and served with garlic toast.

On to the more junky food that I consume. To the right there’s a No-Queso Quesadilla with added Nearly Beef TVP and served with Tofutti vegan sour cream. Sooo good.

I also had pizza this week. Topped with onions, green bell peppers, faux ground beef and Follow Your Heart mozzarella soy cheese. Delicious when you broil the cheese until it gets all melty.

I really love Worthington canned faux meats. They’re delicious and convenient, since you can just open the can and fry the contents with some veggies for a quick and yummy meal. Here are the Worthington Veggie Steaks after I fried them in a skillet with onions, green bell peppers and some chili powder then put it on top of a tortilla. I topped the mix with freshly chopped tomatoes and Tofutti vegan sour cream.
